800 Cafe Highlighted in Magazine

The NDSU dietetic program's 800 Cafe is featured in the latest Food Management magazine in the section "What's trending in C&U foodservice."

The student-led cafe is the topic of an article titled "Meals under 800 calories option opens at North Dakota State University."

"This magazine normally features large universities so it is really cool that our program is put in the spotlight. It's nice to have national publicity for our dietetics program, because we think NDSU is a great place for students," said Sherri Nordstrom Stastny, professor of health, nutrition and exercise sciences, who instructs the class that produces the meals. "NDSU dietetics and graduate programs have long-term relationships with multiple community healthcare, sports complex and other organizations, and the 800 cafe is great example of how dietetics works with the community. Many of our customers come to campus just for these meals."

The cafe opens for the season on Friday, Feb. 28, with a meal managed by dietetic students Sierra Jones and Abby Glaser. The menu includes a fresh fruit bowl appetizer, followed by a main course of baked salmon and vegetable frittata with English muffin and spicy potato wedges. The dessert is "Fruits of the Forest Crisp" with a dollup of vanilla Greek yogurt.

On Friday, March 6, the cafe is set to present "Jungle Survival." The three-course meal begins with a lentil stuffed pepper casserole made of white rice, bell peppers, tomatoes, lentils and garbanzo beans. The main course will be garlic lemon broccoli gemelli pasta with red pepper flakes that is sprinkled with optional parmesan cheese. The meal will finish with a vegan dessert that omits rationed ingredients during World War I -- butter, milk and eggs. The meal is managed by dietetics students Rachel Ca and Austin Croze

The cafe is located in room 312 of the Katherine K. Burgum Family Life Center. Seating begins at 11 a.m. and the last seating is at 12:15 p.m.

The meals costs $10 per person, with beverages included. Four meals can be purchased at the price of a $35 punch card. Payments can be made in form of cash or check at the door on the day of the meal. With limited seating, reservations are preferred, but walk-ins are also welcomed if there is available seating.
